Easy Peasy Vegetarian Recipes: Vegan Chicken Salad-Stuffed Tomatoes

So, a little while ago I had a ton of tomatoes that were about to go bad and some frozen faux chicken in the freezer. I searched for a way to get rid of them both and I found a cool looking recipe on Eating Well and I made it vegan.

What you need:
1 celery stalk
1 green onion, finely sliced
1 tbsp relish
1/4 tsp dill
1/4 cup mayonnaise (use vegan mayonnaise for a vegan version)
approx 6 oz mock chicken or 10-12 mock chicken deli slices
4 plum tomatoes, halved
Freshly ground pepper, to taste
2 teaspoons sliced fresh chives

Using a food processor or a grater, dice the celery. Slice the mock chicken into approximately 1 cm square pieces. Combine all ingredients in a large bowl until well mixed. Then scoop out insides of tomatoes and fill with chicken salad. Sprinkle with pepper and chives.
