Easy Peasy Vegetarian Recipes: Pan Seared Potatoes

Pan seared potatoes are probably one of the easiest and most versatile vegan dishes that you can quickly make. You can serve it as a hot breakfast item in the morning, alongside a salad for lunch, or even as a side dish at dinner. It’s a colorful and very filling dish that doesn’t take too long too prepare. Try it out and see how well you enjoy it.

Makes three servings

2 cups of small chopped red potatoes
1 cup of mixed veggies
1 teaspoon of vegan margarine (such as Earth Balance or Willow Run)
3 teaspoons of extra virgin olive oil
2 teaspoons of parsley flakes
2 teaspoons of dried basil flakes
1 teaspoon of garlic salt
1 teaspoon of ground black pepper

In a large pan mix the potatoes, vegan margarine, olive oil and seasoning on medium heat. Once warm, mix in the veggies and simmer while stirring occasionally until you can easily cut one of the potatoes with a fork.  Serve while hot.
