This month is the Vegan Month of Food. Vegan MoFo was originally created on the Post Punk Kitchen, as homage to NaNoWriMo, where people try to write a novel in the month of November. The idea behind Vegan MoFo is that blogger try to write about vegan food for the entire month of September.
One of the biggest concerns new vegetarians have while starting out is cooking for themselves and finding tasty veg*n foods for them to eat. As time goes on most vegetarians learn how to take recipes that they find and make them vegetarian with various substitutes. Below is a great option that is incredibly simple to make.

Makes four servings
3/4 cup all-purpose flour
1-3/4 teaspoons baking powder
1/2 teaspoon salt
1-1/2 teaspoons white sugar
1/2 cup and 2 tablespoons vanilla soy or almond milk
1/2 banana
1 tablespoon and 1-1/2 teaspoons plain applesauce or vegan margarine (such as Earth Balance or Willow Run)
Directions
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the soy milk (or any milk substitute), banana and applesauce; mix until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
