
Sandwiches are probably the easiest and most versatile vegetarian dish you can quickly make and eat on the go. You can use a variety of breads, wraps, and buns that could be served hot or cold with delicious side dishes to pair with it. As a vegetarian, grabbing some sort of light spread and bunch of veggies can end up being part of a mouth-watering lunch plate, and it could be extremely inexpensive and healthy too.
To make things a vegan fare, ditch the dairy cheese and substitute it for slices of faux cheeses, such as Daiya, Vegcuisine soy cheeses and Dr. Cow cheeses. Since I’m not a fan of a lot of dairy-based condiments, I often find myself shoving slices of avocado into everything to substitute cheese and other condiments if a vegan option is not available.
If you do want to pick up more vegan alternatives for the home, vegan condiments such as
Nutritional yeast, which has a nutty, cheese-like flavor;
Hummus, which is a delicious mixture of chickpeas, tahini, lemon, and spices;
Tamari, a gluten free soy sauce;
Sriracha, a hot and savory slice of heaven also known as rooster sauce;
Sweet Chili Sauce, which is a mild chili sauce;
Ume Plum Vinegar, which is made from fermenting of umeboshi plums;
Thai Curry Paste, a vegan option for curry lovers;
Miso, which is the same paste used in Japanese miso soup;
Natural Butters, which are a large variety of butters made from nuts, fruits, and seeds; and
Vegenaise, which is an egg, dairy, gluten, cholesterol, and GMO-free vegan mayonnaise, are amazingly delicious options for any sandwich or dish.

Here’s one easy sandwich you can try to start off.
What You Will Need:
two slices of any regular sandwich bread in a toaster
A slice of cheese or cheese alternative
One half of a small avocado sliced into small wedges
One small half of tomato sliced into thin pieces
Two teaspoons of hummus
Directions:
Toast two slices of any regular sandwich bread in a toaster,
spread the hummus on one slice of bread,
pile the cheese (or cheese substitute), avocado and tomato on the the sandwich,
and then place the other toasted bread slice on top and enjoy!
