
So, in honor of my month-long trip to Italy, I thought it would be appropriate to reintroduce some easy Italian-inspire dishes. This pasta recipe is probably the easiest thing you can make, and it’d pretty tasty too. The Vegan Sausage, Olive Oil, Tomato and Basil Pasta dish is really great for a last minute dinner at the house, and it goes great with a little garlic bread too. Buona Apetit!
Serves 4
What you will need:
1/2 (16 ounce) package spaghetti pasta
1 roma (plum) tomatoes, seeded and diced
1/2 cup olive oil
1 clove garlic, minced
1/4 cup fresh basil leaves, cut into thin strips
salt and pepper to taste
1 package of vegan Morning Star sausage
Wine to drink (optional, yet preferred)
Directions:
Bring a large pot of lightly salted water to a boil. Add the pasta and cook for 8 to 10 minutes or until al dente and then drain. In a large bowl, gently toss the cooked pasta, tomatoes, 1/4 of olive oil, garlic, and basil and season it with salt and pepper.
Brown the vegan sausage in a pan using the other 1/4 cup of olive oil and salt and pepper to taste. Chop the sausage into bite-sized pieces and then toss it into the bowl of pasta and serve.
